Recipe: Healthy Zucchini Bread – No Sugar, Low Carb


We LOVE zucchini bread! Anything that you can make sweet, but still get your veggies? We’re in. Typically, Zucchini Bread can be very fattening and have a lot of sugar and oil in it. But, this recipe limits the sugar and carbs, so you can eat more of the good stuff;) Enjoy!

Zucchini Bread – No Sugar, Low Carb
Minutes to Prepare: 15
Minutes to Cook: 60
Number of Servings: 15

¾ cup grated zucchini
8 eggs
½ cup coconut oil (melted)
¼ cup steviva blend
1 tsp vanilla extract
1 1/2 tsp cinnamon
½ tsp sea salt
¾ cup coconut flour
1 tsp baking powder
½ cup chopped walnuts

Tip: Make sure you get the lumps out of the coconut flour if mixing by hand.

1. Preheat oven to 350 degrees.
2. Line a medium sized loaf pan with cooking parchment and lightly oil.
3. Put all ingredients, except the walnuts) in a blender.
4. Blend until well mixed and coconut flour is no longer lumpy.
5. Stir in walnuts and pour into loaf pan.
6. Bake for 1 hour.Serving Size: makes 15 slices; approx ½ inch thick
